Poultry and Eggs - Eggs in Hash Nests



INGREDIENTS
  • 3 cups cooked ground beef
  • 1 1/2 cups mashed potatoes
  • 2 tablespoons minced onion
  • 3/4 cup milk
  • 4 tablespoons fat
  • Salt and pepper to taste
  • 6 eggs

INSTRUCTIONS
Combine beef, potatoes, onions, and milk to make a hash mixture. Melt fat in a heavy skillet. Add hash and cook until heated through. Season to taste with salt and pepper. Shape heaping tablespoons of the hash on a greased shallow baking pan. Make an indentation in the center of each “nest.” Slip an egg into each hollow; season with salt and pepper. Bake at 325º for 20 minutes or until eggs are set.
