Fruits and Vegetables - Sweet and Savory Southern Baked Beans

  • 6 slices bacon, cooked crisp and crumbled
  • 1 medium sweet onion, diced, and sauteéd in bacon grease until limp
  • 1 (15.5-ounce) can pork and beans, partially drained
  • 1 (15.5-ounce) can Great Northern beans, partially drained
  • 3 tablespoons prepared yellow mustard
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1 tablespoon lemon juice

Preheat oven to 350°. Divide cooked bacon in half, reserving one portion for top of casserole. Mix sauteéd onion, half of the cooked bacon, and the remaining ingredients.
Coat a casserole dish with cooking spray and pour in the bean mixture. Bake for 1 to 11/2 hours or until it reaches desired consistency, stirring about halfway through the baking time. Sprinkle with reserved bacon crumbles and allow beans to sit for at least 10 minutes before serving.
