Meats & Seafood - Barbecue Brisket

  • 3 to 4 pounds brisket
  • 1/2 cup soy sauce
  • 1/2 cup sherry
  • 3 tablespoons brown sugar
  • 3 cloves garlic, crushed
  • 2/3 cup Worcestershire sauce
  • 1 tablespoon liquid smoke
  • Salt and pepper to taste
  • Barbecue sauce

Put brisket in a glass bowl. Mix together soy sauce, sherry, brown sugar, garlic, Worcestershire sauce, and liquid smoke and pour over brisket. Cover and marinate for at least six hours, turning once.
Remove brisket from marinade and drain; season with salt and pepper. Rub brisket with barbecue sauce, wrap in aluminum foil, and place on grill. Grill over medium heat for two to three hours or until done. Slice brisket across the grain to serve.
