Recipe of the Month Fruits and Vegetables - Grilled Fruit Kabobs

  • 1 (16-ounce) can chunk pineapple, drained, (reserve juice)
  • 1 cup lemon juice
  • 4 bananas
  • 4 kiwis
  • 4 peaches
  • 4 apples
  • 4 mangoes
  • 1 pound grapes
  • 1 pound strawberries

Mix reserved pineapple juice and lemon juice in a bowl. Cut bananas, kiwis, peaches, apples, and mangoes in chunks. Alternate fruit on metal or wooden skewers. Place kabobs in a deep dish and pour juice over the top; allow fruit to sit for one hour.
Remove kabobs from juice and place on grill. Grill for 11/2 to 2 minutes on each side.
