Meats & Seafood - Breaded Pork Chops



INGREDIENTS
  • 1/2 cup milk
  • 1 egg, lightly beaten
  • 6 pork chops (1 inch thick)
  • 11/2 cups crushed saltines (about 45 crackers)
  • 1/4 cup oil

INSTRUCTIONS
In a shallow pan, combine milk and beaten egg. Dip each pork chop in the mixture and then cover with cracker crumbs, patting to make a thick coating. Heat oil over medium heat in a skillet. Cook pork chops, uncovered, for eight to 10 minutes per side or until browned and no pink remains or juices run clear.
The cook says: My mom was a fabulous cook, although she had a public job that left little time to prepare complicated meals. We had milk from our Jersey cows,
eggs from our barnyard chickens, and pork chops from fresh-butchered hogs. She could whip up a scrumptious meal that tasted like she cooked all day. This one stands out in my memory as one of her very best.
