Poultry and Eggs - Praline Pecan Chicken

  • 6 or 7 boneless, skinless chicken breasts
  • 2 tablespoons Creole seasonings
  • 1/4 cup margarine
  • 1/2 cup maple syrup
  • 2 tablespoons brown sugar
  • 1 cup pecans, chopped

Sprinkle chicken breasts with Creole seasonings. Rub seasonings in and wait for about five minutes. Toast pecans lightly and set aside.

Melt margarine in large skillet and add chicken. Cover and cook chicken for about five minutes per side. When chicken is done, place on a warm platter and set aside, keeping it warm. Add brown sugar to syrup, stir well, and pour into skillet drippings. Mix well, bringing to a light boil. Pour in pecans and toss to coat. Cook for one minute and pour mixture over chicken.
