Desserts - Pecan Clusters



INGREDIENTS
  • 1 cup packed light brown sugar
  • 1 1/2 cups pecan halves
  • 1 tablespoon sifted flour
  • 1 egg white, stiffly beaten

INSTRUCTIONS
Preheat oven to 325°. Combine egg white, sugar, and flour, stirring until mixture is smooth. Add pecans, a few at a time, so each will be well coated with mixture. Drop a small amount (2 nuts) about 1 inch apart on an ungreased cookie sheet.
Place in preheated oven. Do not open door for five minutes, and then watch carefully. When cookies are slightly brown (do not overbake), remove from oven. Cool five to 10 minutes; remove from pan with a spatula to a heavy towel to finish cooling.
The cook says: Cookies will pull apart if they are removed warm. Just push them gently back together. I use Domino light brown sugar; other sugars I’ve tried do not work. If you have a large crowd or gifts to make, use only 1 pecan at a time when dropping the cookies. This is tedious, but well worth the effort because you’ll have a gorgeous cookie.
