Meats & Seafood - Honey Pecan Chicken and Bacon



INGREDIENTS
  • 4 chicken breasts
  • Bacon slices
  • 1 box cornbread stuffing mix
  • 1/4 cup butter or margarine
  • 1 cup very hot water
  • 1/2 cup chopped pecans
  • 1/2 cup orange juice
  • Glaze:
  • 1/4 cup honey
  • 3 tablespoons orange juice

INSTRUCTIONS
Combine all ingredients, including stuffing seasoning. Place each chicken breast on 1 bacon slice. Spoon stuffing mixture on top. Wrap bacon around chicken and secure with a toothpick. Spread extra stuffing mix in pan.
Glaze:
Mix honey and orange juice to make glaze; pour over top. Cook uncovered at 375ยบ for 40 minutes.
