Fruits and Vegetables - Spiced Dandelion Leaves



INGREDIENTS
  • 3 cups small spring dandelion leaves
  • 2 tablespoons sugar
  • 2 tablespoons white vinegar
  • 1 tablespoon soy sauce
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons olive oil, divided

INSTRUCTIONS
Gather fresh dandelion leaves from areas where chemicals have not been sprayed. Wash leaves well and chop into small pieces.
In a small mixing bowl, stir together sugar, vinegar, soy sauce, and pepper. Whisk in 1 tablespoon olive oil; mix well. Add the dandelion leaves; marinate for 30 minutes.
In a skillet, heat remaining tablespoon of olive oil until hot. Turn heat to low and add the dandelion leaves and marinade. Stir for a couple of minutes until the leaves have wilted. Serve immediately.
