Spiced Muskmelons

Ingredients

  • 2 medium muskmelons
  • 1 tablespoon salt
  • 4 cups sugar
  • 1 cup vinegar
  • 3 cups water
  • 2 teaspoons salt
  • 2 tablespoons whole cloves

Instructions


Peel and wash muskmelons. Over the top of melons, pour 1 tablespoon salt and
enough hot water to cover. Scald for five minutes; drain.
Combine sugar, vinegar, 3 cups water, 2 teaspoons salt, and cloves. Boil for 10 minutes. Add melons and boil for one hour. Cool before serving.
Yield: four to five quarts.
