Sunday Oatmeal

Ingredients

  • 1 cup natural rolled oats
  • 2 cups boiling water
  • 1 large red delicious apple, cored and chopped
  • 1/2 cup raisins
  • 1/8 teaspoon cinnamon
  • 1/2 cup brown sugar, loosely packed
  • 1/4 cup Tennessee sorghum
  • 1/8 teaspoon salt
  • 1 tablespoon butter
  • Instructions


    Place oats and boiling water in a quart microwave-safe dish. Microwave (uncovered) on high setting for three to five minutes, stirring once. Add remaining ingredients to the dish and microwave on medium-high setting for an additional two minutes. Let stand for two minutes more and adjust the seasonings to suit your taste.
    Yield: Two generous servings.
    Variations: If creamier oatmeal is desired, milk may be substituted for half of the water. Use a golden delicious apple for a sweeter taste or a Granny Smith for a more tart flavor. Add cup of your favorite chopped nuts for more fiber.
