Sunday’s Unfried Chicken

Ingredients

  • 6 chicken drumsticks
  • 6 chicken breasts
  • 3 1/2 (approximately) cups ice water
  • 1 cup plain nonfat yogurt
  • Vegetable oil
  • Sunday breading:
  • 1 cup seasoned Italian breadcrumbs
  • 1 cup all-purpose flour
  • 2 tablespoons Old Bay seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 teaspoon black pepper
  • 1 teaspoon poultry seasoning
  • Instructions


    Place chicken in a large bowl filled with the ice water. Pour yogurt in a medium bowl and set aside. Preheat oven to 400º and spray a baking sheet with vegetable oil. Combine all breading ingredients in a large, tightly sealed bag and shake to mix well.
    Remove two pieces of chicken from ice water; roll each in yogurt, place together in plastic bag, seal, and shake, coating thoroughly. Once chicken is well coated, place pieces on baking sheet. Repeat until all 12 pieces are breaded. Then spray chicken lightly with vegetable oil.
    Place baking sheet on bottom rack of oven. Bake chicken for 1 hour, turning pieces every 20 minutes. Serve hot.
    The cook says: “This is a favorite of our families on Sundays. It really does just about taste like it was fried in a big, old cast iron skillet with lots of grease, but it comes from the oven with just a light spray of oil.”
