Parmesan Steak

Ingredients

  • 2 pounds boneless round beef steak
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 egg, beaten
  • 1 tablespoon water
  • 1/4 cup all-purpose flour
  • 1/4 cup Parmesan cheese
  • 2 tablespoons shortening
  • 1 (8-ounce) can tomato sauce
  • 1 small onion, sliced
  • 1 medium green pepper, cut into rings
  • Instructions


    Sprinkle meat with salt and pepper, then pound both sides to tenderize. Cut into chunks that are a little larger than bite-size.

    Combine egg and water, beating well. Mix flour and cheese together in a separate bowl. Dip pieces of meat into egg mixture then into flour and cheese mixture. Brown in shortening in a heavy skillet on all sides.

    Remove browned meat to a 9-x-13-x-2-inch baking dish. Pour tomato sauce over meat, then add onion and pepper slices on top. Cover and bake at 350° for one hour.

    Yield: Six to eight servings.
