Sweet Potato Souffle

Ingredients

  • 3 cups cooked and mashed sweet potatoes
  • 1 cup sugar
  • 1/2 cup milk
  • 1/3 cup butter or margarine
  • 2 eggs
  • 1 teaspoon vanilla
  • Topping:
  • 1 cup coconut
  • 1 cup pecans, chopped
  • 1 cup brown sugar
  • 1/3 cup flour
  • 1/3 cup butter, melted
  • Instructions


    Combine potatoes, sugar, milk, and 1/3 cup butter; pour into buttered baking dish. Combine topping ingredients and spread over potatoes. Bake at 350° for about 30 minutes.
    Yield: Six to eight servings.
