Tomato Basil Pie

Ingredients
- 1 pie crust, baked

1 1/2 cups shredded lowfat mozzarella cheese, divided

3 tomatoes, thickly sliced

1 cup fresh basil leaves

4 cloves garlic, minced

1/2 cup fat-free mayonnaise or salad dressing

1/4 cup Parmesan cheese
Instructions
Sprinkle 1/2 cup mozzarella cheese on the bottom of crust. Arrange sliced tomatoes
on top. Cover with basil and garlic.
In a separate bowl, mix 1 cup mozzarella cheese, mayonnaise, and Parmesan cheese. Spread over pie. Bake at 375° for 35 to 40 minutes until heated and lightly browned.
Yield: Four to six servings.
