Harvest Salad

Ingredients

  • 1 package dry Italian dressing mix
  • 1/2 cup Italian bottled dressing
  • 1/2 cup salsa
  • 1 can dark red kidney beans, drained
  • 1 can yellow hominy, drained
  • 1 can fiesta corn, drained
  • 1 medium cucumber, chopped
  • 2 medium tomatoes, chopped
  • 1 bell pepper, any color, chopped
  • 3 to 5 radishes, chopped (optional)
  • Instructions


    Mix dry Italian dressing, bottled dressing, and salsa. Combine all vegetables and top with dressing. Stir. Chill for two to three hours. Note: This is delicious served with Fritos Scoops (corn chips).
