Ingredients

  • 1½ cups all-purpose flour
  • ¼ cup brown sugar, firmly packed
  • ¼ cup pecans, chopped
  • ½ cup butter or margarine, melted
  • 1 (8-oz.) package cream cheese, softened
  • 1¼ cups powdered sugar, sifted
  • 1 (8-oz.) carton frozen whipped topping, thawed
  • 1 (3-oz.) package peach gelatin
  • 1 cup boiling water
  • ¾ cup cold water
  • 3 peaches, peeled and sliced
  • Instructions

Combine flour, sugar, and pecans. Add butter and mix well. Press mixture into bottom of a 13-x-9-inch baking dish and bake at 350° for 18 to 20 minutes. Let cool on a wire rack. Mix cream cheese and powdered sugar and beat with an electric mixer at medium speed until light and fluffy. Fold whipped topping into cream cheese mixture and spread over crust. Dissolve gelatin in boiling water and add cold water. Chill gelatin to the consistency of an unbeaten egg white. Arrange peach slices on top, cover, and chill until firm. Yields 12 to 15 servings.
