Cucumber-Tomato Salad

Ingredients

  • 2 large cucumbers, peeled and sliced
  • 2 large tomatoes, peeled and cubed
  • 1 small green bell pepper, cut into strips
  • 1 small purple onion, sliced into rings
  • 1/3 cup vegetable oil
  • 6 tablespoons sugar
  • 3 tablespoons red wine vinegar
  • ¾ teaspoon salt
  • 1/8 teaspoon black pepper
  • Instructions


    Mix veggies (cucumbers,
    tomatoes, bell pepper, and onion) in a large bowl.
    Whisk together oil, sugar,
    vinegar, salt, and pepper until sugar dissolves.
    Add veggies to liquid, stirring to coat. Cover and chill at least 3 hours before serving.
