Spray a large baking sheet with non-stick cooking spray. Peel and cut vegetables into 3/4- to 1-inch thick chunks. Place vegetables on baking sheet. Drizzle olive oil over top and mix well. Sprinkle with kosher salt and pepper, if desired. Bake in a 400º oven for 25-30 minutes or until tender.
Cook’s Note: This brings out the sweetness in turnips, and they are one of our favorites. When I make them now, I usually add another turnip. You can add extra of your favorite vegetable, if desired. We love fall, and this is a great and easy side dish.
