Juice from peach slices

½ teaspoon cinnamon

Mix sliced peaches and ½ cup sugar; let stand for 1 hour. Drain the juice and save; add almond flavoring to peach slices. In separate mixing bowl, mix the ½ cup sugar and 1/3 cup softened butter until creamy; add dry ingredients and unbeaten eggs and mix well until blended. Pour in a greased and floured 10x10-inch baking dish. Arrange the peach slices on top of the batter. Mix the ingredients for the topping – juice, flour, and cinnamon – and pour over the top of the peaches. Do not stir into the batter. Bake at 350º for about 40 minutes or until an inserted knife comes out clean. After baking, sprinkle on top with additional sugar and cinnamon. This is good served warm with vanilla ice cream or just by itself!
