Bacon Cheese Fries

Ingredients

  • 3 Bacon strips
  • 3 tablespoons butter
  • ½ onion, diced
  • 1 garlic clove, finely chopped
  • 3 tablespoons all-purpose flour
  • 1½ cups milk
  • 2½ cups shredded sharp Cheddar cheese
  • ½ cup sour cream
  • 2 teaspoons salt
  • Freshly cooked fries
  • 2 tablespoons fresh chives to garnish
  • Instructions


    Fry the bacon in a dry skillet until crisp, then remove and drain on paper towel, crumble, and set aside.
    Melt the butter in a saucepan over medium heat. Add the onion and cook, stirring for about 4 minutes until soft. Add the garlic and cook for an additional minute. Whisk in the flour and cook for an additional 30 seconds. Slowly add the milk and cook over medium heat, whisking constantly, for 3 minutes until the sauce thickens. Reduce the heat to low and add the Cheddar cheese, ¼ cup at a time, stirring after each addition until the cheese is completely melted. When melted, stir in the sour cream, mustard, and salt. Keep the sauce warm until ready to serve.
    Deep fry the fries. When they are done, place them in a large bowl and pour the
    sauce over them. Sprinkle with the crumbled bacon and chives and serve immediately.
