Apple Cupcakes

Ingredients

  • 1 box white cake mix
  • 1 cup apple juice, from frozen concentrate (reserve 11/2 tablespoons concentrate,
  • undiluted for icing)
  • 1/4 cup applesauce
  • 1 apple, coarsely grated
  • 1 egg
  • 2 egg whites
  • Icing:
  • 1 (8 ounce) package cream cheese, softened
  • 11/2 tablespoons frozen apple juice concentrate, thawed
  • 1 (16 ounce) package powdered sugar
  • Instructions


    Combine cupcake ingredients until smooth; fill muffin cups. Bake at 350ยบ for 22 minutes, or until a toothpick comes out clean.
    For icing, beat cream cheese and apple juice, than add powdered sugar and beat until smooth. Yield: 24 cupcakes.
