Cherry Cupcakes

Ingredients

  • Cupcake:
  • 11/2 cups cake flour, sifted
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 11/2 cups sugar
  • 1/2 cup shortening
  • 3/4 cup milk
  • 1/4 cup maraschino cherry juice
  • 1 teaspoon vanilla
  • 1/2 cup nuts chopped,
  • optional
  • 4 egg whites, unbeaten
  • 18 maraschino cherries, well drained and chopped
  • Icing:
  • 1 box powdered sugar
  • 2 tablespoons butter, melted
  • Enough whipping cream to spread
  • Instructions


    Cupcake:
    Sift flour, baking powder, salt, and sugar into mixing bowl. Drop in shortening, milk, and cherry juice. Then add vanilla and beat 2 minutes at low-speed by mixer. Add egg whites and beat 2 more minutes. Add nuts and cherry pieces.
    Icing:
    Mix well and place on top of cupcakes. You can also garnish the top of each cupcake with a long stem maraschino cherry, if desired.
    These are pretty and delicious. If you are making them for children you can omit the
    nuts.
