Loaded Mac

Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 (16-ounce) box macaroni
  • 1 (8-ounce) can cream of mushroom soup
  • 1 (8-ounce) can diced
  • tomatoes
  • 1 small bell pepper, diced
  • 2 small jalapeño peppers, diced (if desired)
  • 1 cup chicken broth
  • 1 (12-ounce) bag shredded Mexican cheese, divided
  • Instructions


    Fry ground beef with onion and peppers. Boil macaroni until done; drain. In a casserole dish, combine all ingredients with half the cheese. Mix well. Top with remaining cheese. Bake 25 minutes at 300º or until cheese is melted.
