Combine pineapple and sugar in a large bowl; microwave three minutes. Stir until blended. Add gelatin and stir. Refrigerate until cool; add buttermilk and refrigerate. Whip evaporated milk until peaks form; add powdered sugar and vanilla. Fold evaporated milk mixture into pineapple mixture. Add nuts and coconut, if desired.Pour into a 9-x-13-inch pan; chill.
Note: Can be made with sugar-free gelatin and sugar substitute.
