Fresh Peach Fried Pies

Ingredients

  • 3 cups fresh peach slices (about 5 peaches)
  • 2 tablespoons butter
  • 1 teaspoon vanilla
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon nutmeg
  • Pie dough:
  • 11/2 cups all-purpose flour
  • 3/4 teaspoon salt
  • 1/2 cup shortening
  • 5 tablespoons cold water
  • Oil for frying
  • Instructions


    Combine ingredients in a heavy saucepan. Bring the mixture to a boil; reduce heat. Boil gently, uncovered, about one hour or until mixture reaches jam consistency, stirring occasionally. Cool one hour.
    Pie dough:
    Combine flour and salt. With pastry cutter, cut in shortening. Sprinkle with water, a little at a time, working in with a fork until dough is formed.
    On a lightly floured surface, roll dough to 1/8-inch thickness. Cut into 5-inch circles. Place 1 rounded tablespoon of peach mixture on half of each circle. Fold dough over peaches; seal with fork tines. In a skillet, heat 1/4 inch oil to 375ยบ. Fry pies three to four minutes or until golden, turning once. Drain on paper towels.
