Honey Maple Pumpkin Cheesecake

Ingredients

  • 11/4 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/4 cup margarine or butter, melted
  • 3 (8-ounce) packages cream cheese, softened
  • 1 (14-ounce) can sweetened condensed milk
  • 1 (15-ounce) can pumpkin
  • 3 eggs
  • 1/4 cup maple syrup
  • 1/4 cup honey
  • 11/2 teaspoons ground cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • Instructions


    Preheat oven to 325ยบ. In a small mixing bowl, combine crumbs, sugar, and butter. Press firmly on bottom of 9-inch springform pan.
    In large mixing bowl, beat cream cheese until fluffy. Beat in milk until smooth. Add pumpkin, eggs, maple syrup, honey, cinnamon, nutmeg, and salt; mix well. Pour into pan. Bake for 11/4 hours. Cool one hour. Cover and chill four hours.
    Maple Honey Glaze:
    3/4 cup honey
    3/4 cup maple syrup
    1 cup whipping cream
    1/2 cup chopped pecans, optional
    In a medium saucepan, combine honey, cream, and maple syrup; bring to a boil. Boil rapidly 15 to 20 minutes until thick, stirring occasionally. Add pecans, if desired. Spoon over chilled cake.
