Carrot and Tater Fritters

Ingredients

  • 1 egg
  • 1 cup carrots, shredded
  • 1 cup potatoes, shredded
  • 2 green onions, sliced
  • 1/4 cup milk
  • 1/2 cup self-rising flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons oil
  • Instructions


    In a mixing bowl, beat egg. Add carrots, potatoes, onions, and milk. Mix in flour, salt, and pepper. Drop by spoonfuls into hot oil. Cook until golden, about two minutes on each side. Add more oil to skillet as needed.

    Note: You may substitute zucchini instead of potatoes.
