Poppa’s Pecan Pie

Ingredients

  • Pastry for a 9-inch pie
  • 3 eggs, lightly beaten
  • 1/2 cup sugar
  • 1 cup light corn syrup
  • 1/4 teaspoon salt
  • 2 tablespoons molasses
  • 2 teaspoons vanilla
  • 1 cup chopped pecans, lightly toasted and cooled
  • Pecan halves for garnish (optional)
  • Instructions


    Place pastry in a 9-inch pie pan; prick and set aside.
    In a medium mixing bowl, stir together eggs, sugar, corn syrup, salt, molasses, and vanilla until well blended. Add chopped pecans and stir until well coated. Pour mixture into prepared pie pan and dot with pecan halves if desired.
    Bake at 325° for approximately 45 minutes or until the filling is lightly browned and set in the center (test with a toothpick). Serve hot or cold, with or without ice cream or whipped topping.
    Yield: Six servings.
