Strawberry Dessert (Diabetic)

Ingredients

  • 1 angel food cake, cubed
  • 2 packages instant sugar-free vanilla pudding
  • 1 cup cold skim milk
  • 2 cups low-fat, sugar-free vanilla ice cream
  • 1 (3-ounce) box strawberry gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 1 (20-ounce) package frozen strawberries, unsweetened

Instructions


Cube cake and place in 13-x-9-x-2-inch dish. Mix pudding and milk. Beat on low speed for one minute. Add ice cream; beat on low for one minute. Pour over cake and chill. Dissolve gelatin in hot water; add cold water and strawberries. Pour over pudding layer. Chill overnight.
