Pork Chops with Pears

Ingredients

  • 4 to 6 pork chops or steaks
  • Salt and pepper to taste
  • 3 to 4 fresh pears, peeled, halved, and cored
  • 2 tablespoons orange juice
  • 1/4 cup firmly packed brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 cup dry sherry or orange juice
  • 1 tablespoon butter or margarine
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Instructions


    Preheat oven to 350º. Grease the bottom of large skillet with a small piece of pork fat. Brown chops; place in a shallow pan and season with salt and pepper. Arrange pears, hollow side up, around chops; drizzle orange juice over all. Sprinkle with brown sugar and cinnamon; pour sherry over pears and chops. Divide butter and place in hollow of pears. Bake, covered, at 350º for 50 minutes. Uncover during the last 20 minutes.
    Place pears and chops on a platter. Dissolve cornstarch in water. Add to juices in pan and heat until mixture boils and thickens, stirring constantly. Pour over chops and pears.
    Yield: Four to six servings.
