Cabbage-Ham Soup

Ingredients

  • 2 tablespoons butter
  • ¼ cup minced onion
  • ¼ cup chopped celery
  • ¼ cup all-purpose flour
  • ½ teaspoon salt
  • 1/8 teaspoon pepper
  • 3 cups water
  • 2 cups chopped or shredded cabbage
  • 2 cups cooked, diced ham
  • ¾ cup sour cream
  • Instructions


    In a large pot, melt butter and sauté onion and celery until tender. Add flour, salt, and pepper, blending until smooth.
    Add water and cook until mixture comes to a boil, stirring constantly. Add cabbage; cover and simmer until tender, about 10 minutes. Stir in ham and cook until thoroughly heated. Blend in sour cream; heat, but do not boil.
    Note: This soup is very good served with cornbread.
