Summer Salsa

Ingredients

  • 2 pounds tomatoes, seeded and chopped
  • 1 medium onion, chopped
  • 1 medium cucumber, peeled and seeds removed
  • 2 cups sweet pepper, chopped
  • 3 cloves garlic, minced
  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • ½ cup tomato juice
  • Salt and pepper
  • Instructions


    Mix all the ingredients and refrigerate for 1 to 2 hours.
    Serve with chips.
