Cheesy Chicken Fiesta

INGREDIENTS |
- 1 cup Cheddar cheese-flavored cracker crumbs

2 tablespoons taco seasoning mix

8 chicken breast halves, skinned and boned

5 green onions, chopped

2 tablespoons butter or margarine, melted

2 cups whipping cream
-
1 cup (4 ounces) shredded Monterey Jack cheese

1 cup (4 ounces) shredded Cheddar cheese
-
1 (4-ounce) can chopped green chilies, drained

1/2 teaspoon chicken-flavored bouillon granules

INSTRUCTIONS |
Combine cracker crumbs and seasoning mix in a small bowl, stirring well. Dredge chicken in crumb mixture; place in a greased 13-x-9-x-2-inch baking dish.
In a skillet, saute green onions in butter until tender. Stir in whipping cream and remaining ingredients; pour over chicken.
Bake at 350° for 40 minutes. |
