Sweet Potato Balls

INGREDIENTS |
- 6 medium sweet potatoes

1/2 cup butter or margarine

1 cup brown sugar

1 cup pecans or walnuts, chopped

2 cups corn flakes, crushed

12 large marshmallows
|
INSTRUCTIONS |
Boil potatoes, peel and mash. Mix well with butter, sugar, and nuts. Form a ball around one marshmallow; roll in crushed corn flakes. Repeat with remaining marshmallows. Just before serving, warm balls in a 350ยบ oven for 15 minutes or until marshmallows have softened or melted. These can be made ahead of time and refrigerated or frozen. |
