Mushroom, Crab, and Cheeese Quiche

Ingredients

  • 1 (10-inch) pie shell
  • 1 (4-ounce) can sliced mushrooms (drain and reserve liquid) or fresh mushrooms
  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 1 cup crabmeat
  • 11/3 cups finely diced Swiss cheese
  • 1 cup sour cream
  • 1/4 teaspoon salt
  • 1 teaspoon flour
  • 1 1/2 cups light cream (or evaporated milk)
  • 3 eggs, slightly beaten
  • 1/4 teaspoon hot pepper sauce
  • Instructions


    Bake pie shell at 450º for about 10 minutes or until lightly browned. Sauté mushrooms and onion in butter. Scatter mushrooms and onion over bottom of pie shell. Add crabmeat and cheese. Combine sour cream, liquid from mushrooms, salt, and flour. Add enough cream or evaporated milk to make 2 cups; blend in eggs and pepper sauce. Pour over ingredients already in pie shell. Bake at 350º for 55 minutes or until set.
    The cook says: “Recipe can be made in a greased casserole dish instead of a pie shell.”
