Moo Goo Gai Pan

Ingredients

  • 6 tablespoons peanut oil
  • 1 cup celery, sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon ginger
  • 1 cup cashews
  • 1 cup snow peas, sliced
  • 1 cup mushrooms, sliced
  • 4 chicken breasts, skinned and cut in 1-inch pieces
  • 1 1/2 tablespoons soy sauce
  • Instructions


    Heat oil in a large skillet. Add chicken pieces and cook until chicken is partially cooked. Add remaining ingredients, except cashews, and cover. Cook until chicken and vegetables are tender. Stir in cashews and pour mixture over cooked rice. Sprinkle with soy sauce if desired.
