Skinny Veggie Wrap

Ingredients

  • 1 (12-inch) flour tortilla
  • Three slices Swiss cheese
  • 1 cucumber, cut into slices
  • 1/2 green pepper, cut into slices
  • 1/2 red onion, peeled and sliced
  • 1 jar sundried tomatoes in olive oil
  • 2 tablespoons pesto sauce
  • Plain or dill-flavored hummus dip
  • Green leaf lettuce (not iceberg)
  • Instructions


    Spread tortilla with a layer of hummus dip and pesto sauce. Arrange lettuce and cheese. Add cucumber, green pepper, onion, pesto sauce, and sundried tomatoes.
    Roll up slowly as this is a big wrap! Cut in half and serve with tortilla chips and fresh salsa.
