Squash Pickles

Ingredients

  • 8 cups sliced squash
  • 4 onions, chopped
  • 2 green peppers, chopped
  • 1/2 cup pickling salt
  • 3 cups sugar
  • 3 cups vinegar
  • 1 teaspoon celery seed
  • 1 teaspoon mustard seed

Instructions


Sprinkle salt on top of vegetables. Cover with ice cubes and then with water. Allow vegetables to sit for three hours; drain.
Bring sugar, vinegar, celery seed, and mustard seed to a boil; add vegetables. Boil for three minutes. Pack in jars and seal.
