In a saucepan, mix cornstarch, sugar, cinnamon, nutmeg, and salt; add water. Cook until thick and bubbly.
Peel, core, and slice apples. Fill quart jars half full with apples. Pour in enough filling to cover apples, then add more apples and more filling.
Place lids on jars and process in a boiling water bath for 20 minutes.
Yield: Seven quarts
