Low-Calorie PiƱa Colada Squares

Ingredients

  • 4 envelopes unflavored gelatin
  • 6 packages sugar substitute
  • 1 1/2 cups unsweetened pineapple juice
  • 1 cup vanilla ice milk
  • 1 tablespoon flaked coconut
  • 1/8 teaspoon rum extract

Instructions


In a medium bowl, mix gelatin with sugar substitute. Heat pineapple juice to boiling and add to gelatin; stir until dissolved.
Stir in remaining ingredients and blend thoroughly. Pour into an 8- or 9-inch pan and chill until firm. Cut into 1-inch squares to serve.
