White Chocolate Fruit Pizza Tart

Ingredients

  • 3/4 cup butter, softened
  • 1/2 cup confectioner's sugar
  • 11/2 cups self-rising flour
  • 1 (10-ounce) package vanilla baking chips, melted
  • 1/4 cup whipping cream
  • 1 (8-ounce) package cream cheese, softened
  • 1 (20-ounce) can pineapple chunks, undrained
  • 1 (11-ounce) can mandarin oranges, drained
  • 2 kiwifruit, peeled and sliced
  • 1 pint strawberries, capped and sliced
  • 3 tablespoons sugar
  • 2 teaspoons cornstarch
  • 1/2 teaspoon lemon juice
  • Instructions


    In a mixing bowl, cream butter and confectioner's sugar. Gradually add flour, mixing well. Press into an ungreased 12-inch pizza pan with sides. Bake at 300° for 25 to 30 minutes or until lightly browned. Cool.

    In another mixing bowl, beat chips and whipping cream. Add cream cheese and beat until smooth. Spread over cooled crust. Chill for 30 minutes.

    Drain pineapples, reserving 1/2 cup juice; set aside. Arrange strawberries, pineapple chunks, oranges, and kiwi over filling. In a saucepan, combine sugar, cornstarch, lemon juice, and pineapple juice; bring to a boil over medium heat. Boil for two minutes or until thickened, stirring constantly.

    Cool glaze and brush over fruit. Chill for one hour before serving. Store in refrigerator.

    Yield: 12 to 16 servings.
