Coconut Black Walnut Cake

Ingredients

  • 2 cups sugar
  • 4 eggs
  • 1 cup oil
  • 1 cup buttermilk
  • 1 cup coconut
  • 1 cup black walnuts
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon coconut flavoring
  • 3 cups all-purpose flour
  • Syrup:
  • 2 cups sugar
  • 1 cup water
  • 4 tablespoons butter or margarine
  • 3 teaspoons coconut flavoring
  • Instructions


    Blend together 2 cups sugar, oil, and eggs. Sift flour, salt, soda, and baking powder.
    Add to first mixture, along with buttermilk. Add nuts, coconut, and 1 teaspoon coconut flavoring. Pour into a well-greased, floured tube pan and bake at 325° for one hour and 15 minutes.
    When the cake is almost finished baking, make syrup by mixing together 2 cups sugar, water, and butter or margarine. Boil for five minutes; remove from heat. Add 3 teaspoons flavoring.
    While the cake is still hot, make holes in the cake with a knife then pour syrup over cake. Allow the syrup to soak into the cake for four hours before serving.
