Fresh Apple Spice Cake

Ingredients

  • 1 box spice cake mix
  • 1 cup buttermilk
  • 4 eggs
  • 3/4 cup vegetable oil
  • 2 cups finely chopped Granny Smith apples (2 medium apples)
  • 1 cup chopped pecans
  • 1 tablespoon cinnamon
  • Brown sugar glaze:
  • 3 tablespoons packed light brown sugar
  • 3 tablespoons granulated sugar
  • 3 tablespoons heavy whipping cream
  • 1 tablespoon pure vanilla extract
  • Instructions


    Mix cake mix, buttermilk, eggs, oil, and cinnamon on low speed for 1 minute. Scrape sides of bowl and beat on medium speed for 2 minutes. Fold in apples and pecans; pour in prepared pan. Batter will be thick. Smooth with a rubber spatula. Bake for 40 minutes until light brown and cake springs back when you press lightly. Prepare glaze while cake is baking.
    Brown sugar glaze:
    Cook on medium heat until sugars are dissolved, stirring often. Bring mixture to a
    boil and boil for 1 minute, stirring frequently. Pour on warm cake. Cool cake for 30 minutes
    before serving.
