Cajun Chicken and Vegetables

Ingredients

  • 1/2 stick of butter
  • 2 boneless, skinless chicken breasts, chopped
  • 1 (12-ounce) package stir-fry vegetables
  • 1 small onion, diced
  • 1 can Mexican rotel, drained
  • Cajun seasoning to taste

Instructions


In a large skillet, cook chicken in oil until brown. Add remaining ingredients, season to taste, and serve as is or over rice.
