Cajun Chicken and Vegetables

Ingredients
- 1/2 stick of butter

2 boneless, skinless chicken breasts, chopped

1 (12-ounce) package stir-fry vegetables

1 small onion, diced

1 can Mexican rotel, drained

Cajun seasoning to taste
Instructions
In a large skillet, cook chicken in oil until brown. Add remaining ingredients, season to taste, and serve as is or over rice.
