Veggie Bacon Monkey Bread

Ingredients

  • 3 (10-count) cans biscuits, (preferably the larger biscuits)
  • 3/4 cup chopped onion
  • 11/2 cups chopped green sweet peppers
  • 11/2 cups chopped red sweet peppers
  • 3/4 cup chopped celery
  • 1 pound bacon, crisply cooked and crumbled
  • 1 cup butter, melted
  • Parmesan cheese (the kind in a shaker can) or shredded Cheddar

Instructions


Preheat oven to 350ยบ. Spray or grease a large Bundt pan and set aside. Chop vegetables about 1/4 inch thick and place in a large bowl. Add bacon and mix all together. Cut biscuits into quarters (scissors work well) and place in a single layer on a cookie sheet. Drizzle melted butter over biscuits until all are well-coated (use your hands). Liberally sprinkle cheese over the biscuits and then transfer them to the bowl of vegetables and bacon and mix gently but thoroughly. Spoon the mixture into the prepared pan. Bake for 30 to 35 minutes or until biscuits are brown and invert onto a serving plate.
