Fresh Pasta Sauce

Ingredients

  • 1/2 green bell pepper, finely chopped
  • 1/2 red or yellow bell pepper, finely chopped
  • 3 Roma tomatoes, seeded and finely chopped
  • 4 tablespoons fresh parsley, finely chopped
  • 2 tablespoons sweet basil, finely chopped
  • 4 to 6 green onions, (both white and green parts), finely chopped
  • 1 clove garlic, finely chopped
  • 1 tablespoon freshly ground black pepper or to taste
  • 1 teaspoon Kosher salt or to taste
  • 1/4 cup lemon juice or to taste
  • 2/3 cup extra virgin olive oil
  • Instructions


    Mix all ingredients together. Chill for at least one hour or until flavors blend.
    Cook desired pasta following package directions (works well with any variety).
    Mix the fresh sauce with cooked pasta, stirring gently until well-mixed.
    Serve pasta sauce hot or cold; it can also be served as a salad or side dish. To serve hot, warm sauce in the microwave so it won’t cool the hot pasta.
    Number of servings will depend on the amount and type of pasta.
