Cowboy Caviar

Ingredients

  • 2 cans black-eyed peas, drained
  • 1 medium green pepper, chopped
  • 1 medium purple onion, chopped
  • 2 avocados, chopped
  • Juice of one lime
  • 1/4 cup zesty Italian dressing
  • 1 can Rotel tomatoes (mild or hot, to taste)

Instructions


Mix all ingredients; referigerate overnight. Serve with corn chips.
