Heat oven to 350ยบ. Grease a 10-inch cast-iron skillet. In a large bowl, combine sour cream, milk, and sugar; mix well. Add muffin mix; stir to blend. Spread batter in greased skillet.
For topping, stir together sugar and flour in a small bowl. With a pastry blender or fork, cut in butter until crumbly. Sprinkle over batter.
Bake 35 to 40 minutes or until golden brown and cake begins to pull away from sides
of skillet. Cool for 10 minutes. Gently spread preserves over cake. Cut into wedges and serve.
Note: This cake can easily be made with different flavors of muffin mix and preserves.
