Tomato Pie

Ingredients

  • 4 large tomatoes (preferably beefsteak), sliced
  • 1/2 teaspoon salt
  • 1/3 cup light mayonnaise
  • 3 teaspoons cornstarch
  • 1 egg white
  • 2 unbaked pie crusts
  • 1 1/2 cups shredded mixed cheeses
  • 4 to 5 green onions or any type onion, thinly sliced
  • 2 tablespoons fresh, chopped herbs (thyme is good)
  • Instructions


    Preheat oven to 450º. Salt the tomatoes; drain and pat dry. Mix mayonnaise and cornstarch. Brush egg white over the bottom pie crust. Scatter about 1/3 of the cheese over the egg white. Layer 1/3 of the tomatoes over the cheese. Layer 1/2 of the mayonnaise mixture and then 1/2 of the onions. Scatter 1 tablespoon of herbs over the onions. Repeat layers, ending with the remaining cheese and tomatoes. Place the top crust over all and crimp. Make four slits and brush with egg white, if desired.
    Bake pie on a rimmed baking sheet for 10 minutes. Reduce heat to 325º and bake until crust is golden, about 40 additional minutes.
